Purple cauliflower rice is a really cool side dish. It’s a smart alternative to regular rice. One cup of white rice has 5.6 times more carbs than the same amount of cauliflower rice. Cauliflower rice is packed with vitamin C too, and purple cauliflower rice is really pretty!

Replacing regular rice with cauliflower rice is a great idea, especially for those with chronic diseases such as diabetes.

It has a great bite, much lighter than conventional rice and doesn’t leave you conked out on the sofa veering to the food coma zone.

Purple Cauliflower Rice by Diverse Dinners

 

 

Clearly, purple cauliflower rice is a vibrant side dish. It will brighten up your dining table and have everyone intrigued. The joy will be when they taste it and begin to enjoy it. You will be pleased as punch.

You can of course use regular white cauliflower if you prefer, or cannot get hold of purple cauliflower, the process is the same.

I plan on experimenting with cauliflower rice and will make a rice bowl or two. I will share those recipes with you once I’ve mastered them.

Folks who have to watch their carb intake should be all over this, and if they’re not, do them a favor and get them to try it.

 

Purple Cauliflower Rice

Ingredients

  • 2 heads purple cauliflower
  • 4 tsp olive oil
  • Salt to taste

Equipment & Utensils

  • Food processor
  • Large sauté pan with cover

Instructions

  • Remove large stem from cauliflower, then remove florets and cut them into bite size pieces
  • Place florets in food processor and pulse until florets become rice like in texture.
  • You may have to process 1 head at a time.
  • Heat 2 tsp of oil in sauté pan on medium then add half the amount of processed cauliflower.
  • Sauté until cauliflower is warm.
  • Season with salt to taste, then cover pan and lower heat to simmer.
  • Allow to cook until grains soften slightly but still have bite.
  • Transfer to large bowl and cover with aluminum foil to keep warm
  • Heat the balance of olive oil, and then add the balance of processed cauliflower.
  • Repeat cooking process and then add to first batch in large bowl.
  • Serve family style or as required.
