Sometimes, I just need a dinner for one. Something I can put together in minutes, but a meal that is still wonderfully tasty and nutritious. When those times come about, I make something just like this – spicy chicken with tomatoes and blueberries.

This dish is so easy to create. You just coat the chicken with sambal oelek, and then sprinkle with salt. Place the tomatoes and blueberries on a baking tray, then the chicken on top. Finally, bake in the oven until the chicken is crispy. That’s it!

The sambal oelek gives great flavor and a spicy kick to the chicken. The blueberries caramelize a little and become sweeter, and when mixed with the tomatoes sweet and sour taste you get a perfect combination that tempers the spiciness of the chicken.

It’s surprising how tasty this dish is considering it only takes a few minutes to put together. It feels like magic. There is very little prep work, the oven does all the work during cooking. All you will have to do is transfer to a plate and enjoy.

This is a great recipe for one. But if you want to make spicy chicken with tomatoes and blueberries for two or three, or even four, just double, triple or quadruple the ingredients, lengthen the cooking time, and enjoy.

Spicy Chicken with Tomatoes and Blueberries

Ingredients

  • 2 tbsp sambal oelek
  • 1 chicken quarter thigh
  • 1/4 tsp kosher salt
  • 1 cup grape tomatoes
  • 1 cup blueberries
  • Drizzle olive oil
  • 1 tsp shallots sliced - green part only
  • Drizzle balsamic glaze

Equipment & Utensils

  • Baking tray
  • Aluminum foil

Instructions

  • Generously coat chicken with sambal oelek, then sprinkle with salt and set aside.
  • Place tomatoes and blueberries in the center of a foil wrapped cooking tray,
  • Place chicken on top of tomatoes and blueberries.
  • Do your best to push as many of the tomatoes and blueberries under the chicken as you can.
  • Drizzle chicken with olive oil and then place in a preheated oven at 425.
  • Cook for approx. 1 hour, checking regularly making sure you keep as much of the tomatoes and blueberries under the chicken as you can.
  • Remove from the oven once the juices from the chicken pieces run clear when pierced, and the skin is crispy.
  • Spoon the tomatoes and blueberries onto a plate.
  • Sprinkle with scallions and drizzle with balsamic glaze.
  • Carefully place chicken either on top or aside the tomatoes and blueberries and serve immediately.

Notes

If you decide to increase the serving, swap the baking tray for a large baking pan so that the tomatoes and blueberries are contained and less likely to move around.
