There are times when you want to fire up the grill, but instead of a juicy steak or burger, you prefer a lighter option for your evening meal. Halibut steaks are a great choice for those moments. They’re dense and will not easily break apart on the grill so long as you don’t let the halibut dry out. Bathing halibut in a sauce while cooking, such as lemon butter, works a treat. 

Once cooked, grilled lemon butter halibut steaks are so satisfying and very tasty. I usually just add veggies, but if you need a more substantial side dish you can cook some potatoes on the grill with the halibut. Slice up some potatoes, part cook them and then throw them on the grill next to the halibut. Halibut steaks are hearty and flaky, so whatever you decide to serve with them will go down great.

I managed to find a 1 lb halibut steak, but two 6-8 oz steaks will work just fine. Just make sure they’re approximately 1 inch thick.

I really enjoy an oaky chardonnay with grilled lemon butter halibut steaks. Oh my, what a pairing! Halibut’s fluffy dense texture goes so well with a wine that has a lot of character. You can also serve with champagne. Or, if you prefer red, try a light and fruity pinot noir.

If you want to serve this dish to friends, you’re good to double up on quantities, just be a little cautious and do a taste test whenever you can.

 

Grilled Lemon Butter Halibut Steaks

Ingredients

  • 1 lb halibut steaks - 1 inch thick
  • 3 tbsp soy sauce
  • 1 tsp apple cider vinegar
  • 2 tsp garlic powder
  • 1 tbsp unsalted butter
  • 3 tbsp lemon juice
  • Cooking oil for grill
  • 1/2 a lemon thick slices

Equipment & Utensils

  • Outdoor grill
  • Food thermometer
  • Board for resting
  • Aluminum foil

Instructions

  • Heat up grill to a medium heat.
  • Mix together soy sauce and vinegar, then pour over halibut on both sides.
  • Sprinkle both sides of halibut with garlic powder, and set aside.
  • Pour lemon over butter and heat until butter melts and stir to combine.
  • Brush grill with oil to prevent fish from sticking.
  • Generously brush one side of the halibut with lemon butter, then place on grill, lemon butter side down
  • Grill approx. 3 minutes then brush top side of halibut with lemon butter before, flipping over.
  • Check internal temperature regularly while cooking.
  • Remove from grill when fish reaches 135°F.
  • Place on a board, tent with aluminum foil and allow to rest for a minute or two.
  • Place lemon slices on grill and cook until golden on both sides.
  • Serve with preferred sides
