I used semolina bread, but almost any bread will work with this recipe. If you like, you can use more than one type of bread, it’ll make your meal a little more interesting. Don’t cut the bread too thick, this is a light meal. The toast should provide a nice crisp base, rather than a slab which would need much more on top to create a balance.

Fried Egg on Toast

Ingredients

  • 2 packed cups of fresh parsley leaves only
  • 1/4 yellow onions sliced very thin
  • 2 tbsp extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1/4 tsp fine salt
  • 1 large radish bulb sliced very thin
  • 1/2 cup of cooking oil
  • 4 large eggs
  • 4 slices bread

Equipment & Utensils

  • Fry pan
  • Toaster

Instructions

  • Place parsley and onions in a bowl.
  • Mix together oil and vinegar and drizzle over parsley and onions.
  • Mix together until completely combined and then sprinkle with salt.
  • Heat cooking oil in fry pan until hot and fry eggs to desired doneness.
  • Once eggs are cooked, place on a plate to allow oil to drain.
  • Toast bread and place on plate or platter
  • Divide parsley into four and place on toast.
  • Layer with radish slices, then place an egg on top.
  • Serve immediately.
