In celebration of Prince Harry and Meghan’s wedding, I give you Lemon Elderflower Pimm’s. This is a delightful refreshing cocktail made of British inspired ingredients.
The reason for my choice of ingredients for this cocktail are simple. Harry and Meghan’s wedding cake is a lemon and elderflower cake. I decided on Pimm’s for two reasons (1) it’s quintessentially British, and (2) it’s super refreshing.
Pimm’s is traditionally mixed with Gin, but it goes really well with so many other spirits and liqueurs. Adding cucumber and fruits helps to balance out the flavors and looks gorgeous when served in a tall glass.

For me, Pimm’s evokes memories of sitting on a bench in the gardens near my office in Liverpool Street enjoying a late lunch with my team after one of many grueling weeks. There was also many a Thursday night, at Broadgate Circle, standing room only, working through pitchers of Vodka Pimm’s. Those were the days. Good glory, Pimm’s really makes me home sick.

Did you watch the coverage of the royal wedding? I was up early texting with my mother who is back home. We had a great time, sharing our views on the guests’ fashion.
The ceremony was beautiful, the bride was beautiful, the groom was resplendent, and I was tearful!
Lemon Elderflower Pimm’s
Ingredients
- 2 x 6 inch skewers
- 10 fresh blackberries
- 4 inches greenhouse cucumber peel and cut into batons
- Ice
- 1/2 cup fresh lemon juice
- 1/2 cup Pimm's No. 1
- 1 cup St Germain elderflower liquueur
- Ginger ale
- 2 sprigs fresh mint
Equipment & Utensils
- Cocktail jug
- Stirrer
- 2 x tall glasses
Instructions
- Push 5 blackberries onto each skewer and place 1 in each glass.
- Add cucumber at least 3 batons to the same glasses.
- In a cocktail jug, place a couple of handfuls of ice then pour lemon juice, Pimm's and St Germain on top.
- Stir gently, then divide into the two glasses, leaving 1-2 inches of space at the top of the glass.
- Top the cocktail with ginger ale, and garnish with a sprig of mint.
- Serve immediately.
