To create the cradle to hold the vinegar, you should use the 1/4 tsp measure of a measuring spoon set, and carefully scoop out a small segment in the middle of each watermelon cube.
If you don’t have a measuring spoon set, use the tip of a small chef’s knife.
Each divot does not need to be perfect, so don’t be intimidated when carving them out. You just need to create a small enough cradle to hold a drop or two of balsamic vinegar. Regardless of how adept you are at creating divots, they will be masked by the the goats cheese and basil.
Do not dig too deep. For two reasons: (1) you only need a small amount of balsamic vinegar for its presence to be felt, and (2) creating a deep hole may result in the vinegar seeping out the bottom, as one of mine did!
In conclusion, I love this recipe, it ticks all the boxes. It’s easy to create, very tasty and impressive looking. I wish I could remember where I first saw this recipe. I’d really like to recognize the genius who created it. I think I saw it on a cooking show, but I watch so many that it is impossible to confirm which one. Nonetheless, Watermelon Goat Cheese Canapes are delicious and I suggest you make them the next time you have a gathering. Your guests will swoon at first bite and beg you for the recipe.
Watermelon Goat Cheese Canapes
Ingredients
- 2 x 1 inch slice watermelon cut from the largest area, the centre, of the melon
- Balsamic vinegar at least 1.32 density
- 1 cup goats cheese crumbled
- 4-6 fresh basil leaves - approx. 1/3 cup cut into ribbons
Equipment & Utensils
- 1/4 tsp measuring spoon
- Serving plate
- Clean-up tools: paper towel toothpick & cotton swabs
Instructions
- Cut melon into approx. 1 inch cubes.
- Using a 1/4 tsp measuring spoon, scoop out a small amount of watermelon from each cube to create a divot for the balsamic vinegar.
- Place watermelon cubes on serving plate.
- Carefully fill divots with balsamic vinegar.
- Place a few crumbles of goats cheese on top and top with a ribbon of basil.
- If needed, use a paper towel to mop up any spills, a toothpick to pick up excess goats cheese, and cotton swabs to clean off marks from the serving plate left behind by spills.
