Baileys Iced Coffee is a wonderful treat. It’s a rich, silky beverage with lots of character and the power to stimulate the mind. All you need is a few ingredients: strong cold brew; Baileys; cardamom and vanilla extract.
I enjoyed my first Baileys Iced Coffee during one of my many trips to Jamaica. I saw a tall waiter, with great posture, carrying a tray holding a creamy iced drink. Beads of condensation were cascading from the glass and the contents looked creamy and very cold. It looked so good, and I believe the waiter’s posture added to the allure of the drink. I asked her what was she carrying, and she replied “Baileys Coffee” with a melodic Jamaican lilt to her tone. I clapped with glee and ordered one and she ensured me one was coming soon.
Since then, any time I go on vacay to the Caribbean, after a late night of cocktails and entertainment, I wake up, pick the days swimwear and head off to breakfast. After breakfast, when I am sat down by the pool or near the beach, I order a Baileys Iced Coffee before my dip in the water.

Baileys Iced Coffee will not transport you to Jamaica, but it if you’re planning a staycation, perhaps one or two during your time off will give you that sunny, beachy feeling… perhaps!
Baileys Iced Coffee
Ingredients
- 2 cups cold brewed coffee
- 2 cups Baileys
- 1/2 tsp cardamom
- 1/2 tsp vanilla extract
- Ice
Equipment & Utensils
- Blender
- 2 Highball glasses
Instructions
- Place coffee, Baileys, cardamom and vanilla into blender.
- Blend on high until frothy.
- Fill highball glasses with ice leaving just a 1/4 inch of space at the top of the glass.
- Pour blended ingredients over the ice and serve immediately.
