Bacon Wrapped Cod is so easy to create, absolutely great looking and flippin tasty. Try this recipe during the holidays – you’ll love it.
Cod fillets are doused in a parsley marinade, wrapped in a thick slice of bacon and then roasted. Finally, a sauce is created from the leftover marinade and the juices from the Bacon Wrapped Cod. The result is a gorgeous piece of fish, that will satisfy your appetite in a few bites. Serve on a bed of rice, or with vegetables and you will have a smashing meal.
Bacon Wrapped Cod is one of those recipes you should try if you’re not a regular in the kitchen but want to create something impressive for dinner. Very little effort gets you a beautiful looking dish that smells fantastic.
I used pork applewood smoked bacon, but you can use beef bacon if pork isn’t your thing, just make sure it’s thick cut. Splurge a little and buy a really nice smokey bacon. The flavor and scent will really make this dish special.
As I mentioned earlier, Bacon Wrapped Cod will make a nice addition to your holiday dinner. This dish looks as good as it tastes, and the spicy, fishy, bacon veiled sauce will have you and your family licking your plate.
