Miso marinated salmon is a simple dish, an ideal weeknight meal. Just combine the five ingredients, allow the salmon to marinate overnight, pop it in the oven for 30-40 mins  – et voila!

Miso Marinated Salmon

I used wild king salmon, (it was on sale – woohoo) and I am so glad that I did. You can really taste the oils in wild king salmon, and adding the smokey sweet flavors of the miso marinade gives the salmon a new dimension in taste. It doesn’t mask the oiliness of the fish, instead you experience a superb richness, and as the salmon is baked in aluminum foil it just melts away leaving your tongue ready for the next bite. If you cannot find some wild king salmon at a good price, farmed salmon is a decent alternative.

If you’re not a salmon lover you can use the miso marinade with fish you prefer, such as cod, chilean sea bass or mahi mahi, but in my opinion miso works best with salmon.

Miso Marinated SalmonBaking the salmon is very simple, just tear off a piece of aluminum foil large enough to parcel each piece of salmon, coat the foil with olive oil so that the skin of the salmon doesn’t stick to the foil, put the salmon filet in the middle of the piece of foil and then create a parcel around it, by folding the sides around the salmon, not too tightly, allowing some room for the juices to flow while cooking. Then finally pop it in the oven.

The results are amazing, a really tasty piece of fish. I served my salmon with sautéed garlic kale, I kept it simple. But you can serve it with almost anything. Why not try serving it with simple mashed potatoes.

Wild king salmon marinated overnight and oven baked to perfection

Ingredients

  • 2 salmon fillets 6-8 oz each
  • 2 tbsp soy and brown rice miso
  • 2 tbsp honey
  • 2 tbsp reduced salt soy sauce
  • 2 tbsp rice vinegar

Instructions

  • Add miso, honey, soy sauce and rice vinegar to a small bowl and mix thoroughly to create a marinade.
  • Place salmon fillets in a dish or bowl and then pour the marinade over salmon fillets making sure to cover the salmon fillets with the marinade completely.
  • Cover and place in fridge overnight, for no less than 12 hours. 24 hours is ideal.
  • Parcel up each fillet in aluminum foil, remembering to brush the foil with olive oil so that the skin of the salmon doesn't stick to the foil.
  • Place on a baking sheet in a preheated oven at 375 for 30-40 mins, until cooked to desired temperature.

Notes

The longer you marinate the salmon, the more intense the flavors.
