Apricot French Bean Salad
Ingredients
- 2 tsp olive oil
- 8 oz french beans
- 1/3 cup red onions sliced
- 1/3 cup dried apricots sliced
- 1 packed cup micro pea leaves
- Fine salt to taste
Equipment & Utensils
- Saute pan or skillet
Instructions
- Heat olive in a saute pan or skillet, then add french beans.
- Saute beans until cooked - the beans should be warmed through but still have bite.
- Add onions and saute for 30 seconds or until onions are wilted.
- Remove from heat and place in a large bowl.
- Add apricots and pea leaves.
- Toss ingredients until mixed thoroughly then apply salt to taste.
- Serve immediately.
