I know there are many of you trying your best to shed a few pounds to get yourself swimsuit ready. But there are times when you have to take a day off, and when that day comes, that cheat day, whatever you eat has to be worth the calories – am I right? Of course I am! Bacon cheddar dip is it. The snack of all snacks, high in calories but absolutely great on the tongue, and if you’re really going for it and ignoring all calorie boundaries, serve them up with kettle chips and savor every bite.

This dip is wicked. Not wicked – cool, it’s the type of wicked you can only afford to indulge in sparingly or else forsake your figure, but when you do, your tastebuds will feel like they have been delivered to glory. Can I get an Amen?!

What I love most about bacon cheddar dip is its versatility. Ladies, if you spread a generous serving on top of a burger and serve it to your husband, you may find yourself in an unexpected place – very much in his favor. For there is nothing like a juicy burger served with bacon cheddar dip. I made a burger with bacon cheddar dip for my friend Nicholas Dehaney (Art Director, Spicegrove Creative). It may be a year ago now, and after his first bite, he quickly dropped his burger and began to dissect it too see what the heck was in his burger that tasted so good. Hilarious.

You can also add this dip to a club sandwich, or simply in between two slices of toasted bread, no matter how you serve bacon cheddar dip you will find that you have amped up your dish to another level. 

This dip is great for parties, it’s rich and high in flavor, so serve small portions with your desired snack item. Enjoy.

Ingredients

  • 8 oz bacon
  • 16 oz sour cream
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 1/4 cup cream cheese
  • 2 cloves garlic minced
  • 2 tsp lemon juice
  • 1/4 tsp pepper
  • 1/4 cup chives finely chopped
  • 7 oz sharp cheddar shredded
  • Pinch salt if necessary

Equipment & Utensils

  • Fry pan
  • Large mixing bowl

Instructions

  • Fry bacon until crispy and then place on paper towels to drain and dry.
  • Place balance of ingredients into a mixing bowl and whisk thoroughly.
  • Crumble bacon and add to bowl and then stir until thoroughly incorporated.
  • Place in the fridge to cool for an hour and then serve.
