This recipe is not an original. I encountered it on my Diverse Dinners Facebook timeline. Baileys Frozen Mocacchino by An Italian in my Kitchen. As soon as I saw the video I knew I had to try this recipe. I changed up some of the quantities and the method, just a little, and renamed it. Baileys Mochaccino Mouse. My recipe would not exist without having encountered An Italian in my Kitchen’s Baileys Frozen Mocacchino. So hats off to the creator.
You will notice that the recipe states that it serves 4-6. Don’t worry to try and split the recipe if you only need enough for two, because I can assure you, one of you is going to want another, most likely both of you, so this recipe will work out just right. Besides any leftovers is between you and your lord!
Valentines isn’t just for couples. Perhaps you’re planning a “singles” valentines party. Instead of buying the dessert, make two batches of this wonderful Baileys mochaccino mousse and it will serve at least eight, maybe ten or 12, depending on the size of your bowls.
The great thing about this dessert is that it doesn’t discriminate, it will satisfy a group of ladies or a group of men, just garnish according to your guests’ tastes.
If you need guidance on what chocolate to use, I used Scharffen Berger, bittersweet dark chocolate, 70% cacao. It’s my favorite for cooking. I always have a 3 oz bar or two in the fridge, and the powdered variety for my Caribbean hot chocolate. Ghirardelli works well too.

Baileys Mochaccino Mousse
Ingredients
- 1/2 cup soft brown sugar
- 1/2 cup strong espresso
- 1/2 cup water
- 1 1/2 cups bittersweet chocolate shredded or chips
- 1/4 cup Baileys
- 2 cups heavy cream
- 2 vanilla pods
- Reddi Wip
Equipment & Utensils
- Small saucepan
- Blender
- Hand mixer
- Glasses or sundae bowls
- cling wrap
Instructions
- Place sugar, espresso and water in saucepan and place on high heat.
- Allow sugar to dissolve, and when liquid bubbles remove from heat.
- Place chocolate, Baileys and hot liquid into blender and blend until ingredients become smooth and thick (approx. 4 minutes).
- Set chocolate mixture aside and allow to cool to room temperature.
- Remove vanilla from pods and add to heavy cream.
- Mix heavy cream with hand mixer until it forms peaks, then fold in chocolate mixture in batches.
- Fill two thirds of each sundae glass by carefully spooning in chocolate mixture, then cover with cling wrap and place in freezer.
- Leave in freezer for one hour, then remove.
- Top with Reddi Wip, then garnish with your favorite topping.
