I have wanted to try bison for some time, so when I stumbled across it while shopping online for food at Freshdirect I decided to buy some and give it a whirl. I wasn’t entirely sure bison would be for me, I thought it would taste fiercely gamey and possibly tough on the palate, but I was wrong. Yes, bison does have a gamey taste, but its subtle, and so long as you don’t overcook it, you will experience a texture much like beef.
I prefer to buy meats that are naturally raised, which can be costly and a little difficult to find at times. So I was pleased to learn that bison is mostly raised in ranches, grass fed, without the use of hormones or antibiotics, and not too much of a strain on my finances. Note that I mentioned that most ranches provide bison that is grass fed without hormones or antibiotics, but not all, so if naturally reared meats or sustainability are important to you, do a little research to make sure the bison rib eye you buy is sourced from a ranch that adheres to regulations and industry standards.
Bison is a great alternative to beef; a bison rib eye has considerably less fat than a beef rib eye and is a breeze to cook. I grilled my bison rib eye on moderate heat.
A lower fat cut of meat might be just what the doctor ordered for your family and friends especially if they are watching their cholesterol, weight or blood pressure. My dad used to love a nice big piece of steak but he had health issues which meant steak should be consumed at a minimum. Bison would’ve been a great alternative for him, I wish I could make him a plate of bison rib eye and watch him marvel at the taste. My dad passed three years ago and I still miss him so, with Father’s day just passing I’ve been thinking about him quite a bit lately. He was a real âcool dadâ, a straight shooter, no mess, no fuss. He gave it to you right between the eyes, so you better be prepared for his opinion. He was also very popular, a charismatic, debonair chap who used to make the ladies swoon young and old. Bison Rib Eye with Avocado Dip
Ingredients
Bison Rib Eye
- 2 boneless 8oz bison rib eye steaks
- 1/4 tsp coarse ground salt
- 1/8 tsp freshly ground black pepper
- 1/2 tbsp olive oil
Avocado Dip
- 1 haas avocado diced
- 1 serrano chili minced
- 1/2 cup of fresh cilantro minced
- Juice of 1/2 a lime
- 2 tbsp water as needed
Instructions
Bison Rib Eye
- Season rib eye steaks with salt and pepper.
- Heat grill to a medium/moderate temperature (450-475)
- Brush grill with olive oil and then immediately place rib eye steaks on grill.
- Leave on the grill uninterrupted for 5 mins to let the meat sear nicely then flip over to sear the other side.
- Once rib eye steaks are cooked to medium, let rest for at least 5 mins before serving.
Avocado Dip
- Place avocado, chili, cilantro and lime juice into a blender and pulse until all ingredients are nicely blended.
- If needed add a tbsp or two of water to bring consistency of dip to soft and smooth.
- Serve in a small dish.
