Fancy something frivolous, but nicely cooling and tasty? Of course you do! Today’s recipe is blackberry prosecco pops and they are everything I described above, you’ll love them.
Blackberry prosecco pops can be served as an aperitif at your next afternoon grilling session. If you and your friends and family are out celebrating life in the sunshine, these babies, will keep you cool and be a nice touch. A frozen tipple is exactly what one needs when it’s hot.
Alternatively, you can make a batch of blackberry prosecco pops all for yourself. I enjoy one after dinner, when I have dinner at home. It kills two birds with one stone – it serves as an after dinner drink and dessert.
Blackberry prosecco pops are simple to make, all you need is some affordable prosecco, fresh blackberries and simple syrup. That’s it! It’s wonderful to know that something so simple can provide such pleasure.
I created my simple syrup with sugar made from evaporated cane juice, which has a light brown hue. You can use whatever sugar you wish, but note, the darker the sugar, the darker your blackberry prosecco pops will appear.
Homemade popsicles have become all the rage. If you haven’t got yourself a mold already, I recommend you buy one from Amazon. Amazon has the widest variety and usually competitive on cost. You will not regret buying a set of popsicle molds. Before you know it you will be making prosecco pops, breakfast pops and all in between.
I won’t drone on about the benefits of blackberries, not when they’re drowned in wine and doused in sugar. This is simply a pleasure pop, nothing more, nothing less, so make a batch soon and share with friends.
Blackberry Prosecco Pops
Ingredients
- 4 cups prosecco
- 12 oz fresh blackberries
- 1/2 cup simple syrup
Equipment & Utensils
- Popsicle molds
- Popsicle sticks
Instructions
- Mix prosecco and simple syrup.
- Fill each mold a quarter way up with sweetened prosecco.
- Push one blackberry into each mold until it reaches the liquid. Cut in half if your blackberries are very large.
- Fill the molds further to half way, and then add another blackberry into each mold.
- Fill the molds further again, to three quarters, and add one more blackberry.
- Add a little more sweetened prosecco, but do not fill the molds completely.
- Cover molds and place in the freezer.
- After approximately one hour, remove molds from freezer and push popsicle sticks into each mold, leaving enough stick out to handle the popsicle once ready to eat.
- Return to freezer and freeze overnight.
- Serve no sooner than the next day.
