Are you chasing around trying to find a recipe for your Super Bowl Sunday party? Well here’s a quick and easy recipe, loaded baked potatoes. You can whip these up in a few minutes, and hopefully, you have all the required ingredients in your fridge.
These loaded baked potatoes are great eaten as a side or all on their own. No surprise, it really doesn’t matter, they’re a treat no matter how you eat them. They’re rather filling though, so no need to make a large quantity, unless you’re serving them alone. If you plan on serving them as as side or part of a combination platter, I’d say one half of a loaded baked potato per person. Or you can serve them as a single course at a party, then you should allow 1 1/2 per person. If you have guests with big appetites though, you might want to allow for one whole loaded baked potato per person.
As I mentioned, loaded baked potatoes are very easy to make, you simply cook the potatoes whole, then slice them in half and scoop out the flesh. Mash the potatoes and add ingredients as directed, then finish off with cheese and peppadews.
Peppadews are so good, sweet tasting with a little kick. They’re a nice surprise to the tastebuds, and finishes off the loaded baked potatoes really nicely.
Baked Loaded Potatoes
Ingredients
- 3 large russet potatoes cooked whole
- 6 rashers bacon
- 1/4 cup sour cream
- 3 tbsp unsalted butter
- 1/4 cup scallions - green part only sliced thin
- 1 1/2 cups cheddar cheese shredded
- 1/4 cup peppadew sliced thin (optional)
Equipment & Utensils
- Fry pan
- Large bowl
- Potato masher
- Large baking tray
Instructions
- Cut bacon into strips and fry until crispy.
- Allow bacon to drain on paper towels.
- Cut cooked potatoes in half, then carefully scoop out flesh and place into a bowl.
- Arrange potatoes skins on a baking tray and set aside.
- To the potato flesh, add sour cream and butter then mash until potatoes are smooth.
- Sprinkle scallions and 1/4 cup of cheddar into the potatoes, then mix with a large fork.
- Remove a tbsp of bacon and set aside, then add the rest to the potato mixture, then mix with a large fork.
- Scoop potato mixture back into potato skins.
- Place potatoes into a preheated oven at 400 and allow to heat through (approx. 10 mins)
- Once potatoes are hot remove from oven, then push a few pieces of the set aside bacon into the potato mixture in each potato skin so that the bacon is visible.
- Carefully sprinkle the rest of the cheese on top of the potatoes, then return to the oven to allow cheese to melt.
- Once cheese has melted, remove from oven, and garnish with peppadew slices and serve immediately.
