I love melon, any kind of melon. I add watermelon to my juices and cocktails. Cantaloupe and galia melons are my go to for fruit salads. I eat chunks of sugar kiss and summer kiss melons all by themselves and I’ve just discovered limon melon which tastes just as it sounds. As I said, I love melon. I also love popsicles and there are times when I want both, so I whip up a batch of Melon Popsicles, much like today’s recipe, Melon Acai Popsicles.
Melon Acai Popsicles are so easy to make. The majority of time needed to create them takes place in the freezer.
Your mold is the most important tool needed for this dish my mold makes ten. There are so many options available, some that require wooden popsicle sticks and others where the sticks are part of the mold. If you don’t have a mold already choose whichever you’re drawn to.
Frozen acai in pouches are what you need for this recipe. It’s much easier to work with and you only need one pouch.
You will likely have some pureed melon leftover but don’t waste it, pour what is left into ice tray molds and use them for cocktails. Or do what I do and pop them into your glass of Prosecco, it’s super delicious.
Melon Acai Popsicles
Ingredients
- 1 x 3 lb melon
- 1/4 cup simple syrup if needed
- 1 serving frozen acai melted
Instructions
- Cut melon in half and deseed and then cut into chunks.
- Place melon chunks into blender and add simple syrup.
- Blend until melon is pureed and smooth.
- Fill popsicle molds to halfway.
- Divide acai into molds but leave at least 1/4 inch space at the top.
- If the cover of your mold tray provide holes for insertion of popsicle sticks, allow the melon mixture to partly freeze before inserting - approx. 2 hours.
- Melon mixture should take approx. 8 hours to completely freeze.
