There are those late mornings when nothing else will do other than a buttery pastry filled with cured meat and cheese and today’s recipe is just that. Pancetta Brie Honey Croissants – pure yum!
Each croissant is filled with cooked pancetta, a slab of brie and topped with a slice of honeycomb. Pure yum! Or did I say that already?
Pancetta brie honey croissants are ideal for brunch, the savory and sweet combo is great as a first course.
I used cooked pancetta from Leoncini, and then I cooked it once more until golden to add eye-appeal and a slight crispiness to the edges. Any pancetta will do though, but if you can get your hands on some Leoncini pancetta, go for it.
I can’t remember where I heard it, but I was told that eating honey that is locally produced helps combat allergies. I’m testing this theory, and have only consumed raw honey produced in New York or New Jersey.
Instead of simply drizzling honey over the brie, I thought it would be great to use honeycomb. The slice of honeycomb in this sandwich looks wonderful, and it’s good for you too. It lowers bad cholesterol, and raises good cholesterol, and a recent study has proved that honeycomb protects the liver.
If you’ve never had honeycomb before, you should give it a try, you eat the wax right along with the honey, it tastes really good. As with everything though, too much of a good thing can cause other issues, and too much honeycomb may cause gastrointestinal problems, so don’t replace all your sweeteners with honeycomb.
I plan on making these again tomorrow for Martin Luther King day. I will be home, relaxing and reading. After my early morning green tea with lemongrass I will progress on to a hearty pancetta brie honey croissant, and raise my mimosa to the skies to celebrate MLK day, and the legacy of Dr. Martin Luther King Jr.

Pancetta Brie Honey Croissants
Ingredients
- 4 oz brie
- 4 croissants
- 1/2 lb pancetta sliced
- 4 slices of honeycomb
Equipment & Utensils
- Large fry pan
- Large board
Instructions
- Before you start, take the brie out of the fridge and cut into 4 slices, 1oz per slice. Then allow to sit to raise to room temperature.
- Place fry pan on high heat and then carefully place pancetta in pan.
- Cook pancetta on each side until lightly golden on edges (approx. 1 min)
- You will likely have to cook the pancetta in two batches.
- Once pancetta is golden, place on paper towel and set aside.
- Place croissants in a preheated oven at 400 to warm through (approx. 1 min)
- Once croissants are warm, place them on a board and cut in half, starting at the thickest part of the croissant, sandwich style, but do not cut all the way through.
- Place equal amounts of pancetta on the base of each croissant.
- Then place a slice of brie on top.
- Top with a slice of honeycomb and then carefully press down on the top of the croissant to keep everything together.
- Serve immediately.
