I’ve been experimenting with juniper berries, they’re a great addition to sweet and savory dishes. Juniper berries are used to create gin, so adding them to this Spiced Cranberry Tea applies a very mild pine flavor. They calm the tartness of the cranberries and apply a subtle sweetness. The balance of the ingredients make this tea a tasty medley of flavors.

I love this tea because it’s great hot or cold, although hot is my preference. After a couple of sips I began shopping for the ingredients once again to make sure I could make another batch very soon.

Spiced Cranberry Tea is simple to make. The spices and cranberries are placed on a low heat until the liquid becomes a concentrated, thickened solution. Then, the cranberries are strained away before fresh orange, lemon juice and water is added. No need for a sweetener, just sip and enjoy.

Spiced Cranberry Tea

Ingredients

  • 8 cups fresh cranberries
  • 2 1/2 ltr water
  • 2 cinnamon sticks
  • 2 tsp juniper berries
  • 2 oranges whole + 1 orange (sliced)
  • 2 Meyer lemons

Equipment & Utensils

  • Medium saucepan
  • Sieve

Instructions

  • Heat cranberries, 1 1/2 liters of water, cinnamon and juniper berries in a saucepan on high heat until the liquid begins to bubble.
  • Lower heat to medium and allow to continue on a slow rumble for 30-45 minutes or until liquid becomes a concentrated juice.
  • Drain juice and pour back into saucepan and discard the balance of ingredients.
  • Juice oranges and lemons and add to cranberry juice, then add balance of water and return to medium heat.
  • Add a couple of slices of orange and allow flavors to combine for 5-10 mins .
  • Serve with a slice of orange.
