Mushroom Truffle Wild Rice is a marvelous side dish. A combination of wild rice, mushrooms (including chanterelle) fried chickpeas and truffle oil. If you want to be real fancy and open to spending some of your well-earned, you can buy a whole black truffle or truffle slices. You can shave a few slices into this dish or use the more easily found preserved truffle slices in lieu of truffle oil. Either would be delish!

Today’s recipe is a toasted coconut rice recipe. It’s an awesome side dish which works so nicely with spicy meat dishes and fish. I served this rice recently with a Thai-inspired stewed chicken, it was so good. My friend was visiting, a male “friend”, and he shared the meal with me. I thought he might balk at the idea of toasted coconut rice, but he loved it, so I took a bow, and now feel comfortable that you will love it too.

Purple cauliflower rice is a really cool side dish. It’s a smart alternative to regular rice. One cup of white rice has 5.6 times more carbs than the same amount of cauliflower rice. Cauliflower rice is packed with vitamin C too, and purple cauliflower rice is really pretty!
Replacing regular rice with cauliflower rice is a great idea, especially for those with chronic diseases such as diabetes.
It has a great bite, much lighter than conventional rice and doesn’t leave you conked out on the sofa veering to the food coma zone.
