Fathers – for Mother’s Day, why not grab your kids and make a virgin mango Bellini for the female head of your home this Sunday?
No alcohol is needed here. This is a simple virgin cocktail comprising of fresh puréed mango, lime juice and sparkling apple juice.
Imagine her glee when you rock up with a tray filled with her favorite goodies and a virgin mango Bellini.
The great thing about this cocktail is that all of the family can enjoy it together. Everyone can get a fancy glass and raise it to the mother in their life. How cool is that?
For this recipe, I used Royal Indian Saffron Mangoes, also known as Kesar Mangoes. They are sweet and the flesh is very delicate which makes them perfect for adding to cocktails. Don’t go crazy looking for them though, as they are only available for a very short period from May to July. You can use any mangoes you like, just try to find sweet mangoes.
How do you know when mangoes are sweet, do I hear you say? Well, just give them a sniff. A sweet mango emanates mango scent. The stronger the scent the sweeter the mango.
A virgin mango Bellini is also a great picnic drink. Sitting out in the sun drinking cocktails can often render you groggy, this virgin wonder is a great alternative and you can avoid the need to take a snooze under a tree.
You can, of course, spike this virgin mango Bellini and tip in your favorite liquor, or replace the sparkling apple juice with sparkling wine – but don’t involve the kids!
Virgin Mango Bellini
Ingredients
- 3 medium mangoes
- Juice from 2 limes
- 1/3 cup cold water
- 25.4 fl oz 750ml sparkling apple juice
Equipment & Utensils
- Blender
- Large Pitcher
- Cocktail spoon on long-handled spoon
Instructions
- Peel, stone and dice mangoes, then blend mangoes until completely puréed.
- Add lime juice and water and pulse until combined.
- Transfer mango mixture to pitcher then add sparkling apple juice.
- Stir carefully until combined then transfer to cocktail glasses and serve immediately.
