Watermelon chunks, lime juice and agave are all you need to make these wonderful watermelon and lime popsicles.
They are so juicy, and tasty, and refreshing, I challenge you to keep them in your freezer for longer than a week.
Fruit popsicles are so easy to make, the difficult part is making sure you have enough moulds to make a decent batch to ensure your family do not go through them before you get home from work. These watermelon and lime popsicles can rival a glass of wine after a stressful day. The fruitiness of the watermelon and zing in the lime will help to push those workday woes to the back of your mind.
If, like me, you are a lover of watermelon and buy them whole, making a batch or two of watermelon and lime popsicles helps to avoid waste in the event, heavens forbid, you are unable to devour the entire watermelon in a timely fashion. You can also make a batch in your ice-cube moulds and use as flavored ice cubes in a cocktail – ooh that would be nice.
Popsicle moulds are really nifty, once the popsicles are solid they’re so easy to remove from the moulds, you just run them under warm water for 30 seconds and then tug at the popsicle sticks and voila, there you have it. Look at my stash basking in the sunlight.
My popsicles mould tray has ten moulds, with a cover, once you blend your ingredients you simply fill them, cover them, and then pop them in the freezer. You should wait until the juice is partly frozen before adding the sticks. Waiting to add the sticks once the juice has begun freezing will help to make sure the sticks are straight, thus avoiding issues when you remove the cover.
At present, I only own one popsicles tray but I plan on getting another as I’ve developed a teeny popsicle habit so I need to make sure I have enough for any impromptu guests, as I refuse to share if the result is I’m forced to go without!

Watermelon and Lime Popsicles
Ingredients
- 6 cups watermelon chunks
- 1/3 cup of lime juice
- 1/4 cup agave
Instructions
- Place ingredients in the blender and then blend on a low setting until the watermelon chunks disappear and you are left with juice.
- Pour into moulds, cover as directed by the instructions included with your mould tray.
- If the cover of your mould tray provides holes for insertion of popsicle sticks, allow to partly freeze before inserting.
- Juice should take approx. 8 hours to completely freeze.
I made these last weekend, gave one to my Mom. We enjoyed it during our recent heatwave in NY, We loved it. It is so cool and refreshing with just the right touch of sweetness.
