These sliders are delicious! A beef patty is surrounded by tomato relish, beef bacon, queso blanco and charred jalapenos, encased in white dinner rolls. Just grab one and in two bites, they’re gone.

The jalapenos are charred, giving off a nice smoky flavor. The seeds and membranes are stripped from the jalapenos, but if you’re a lover of that spicy kick you can add a few seeds to each slider. Be careful though, adding those jalapeno seeds will really add some heat. 

I would describe these sliders as “sliders for grown ups”. Although, the seeds and membranes are stripped from the jalapenos it is still possible to accidentally drop a seed or two into this recipe, which you don’t want a young child to consume. Plus jalapeno sliders with queso and beef bacon go so well with tequila or mezcal. Serve them as appetizers and give everyone a shot with lime to open up the evening with a bang.

Alternatively, serve the sliders with a variety of bites and snacks and pair with a pitcher or two of margaritas. It will be a great night.

Sliders are a real crowd pleaser, and this recipe is no slouch, you will likely need more than one serving. This recipe yields 16, but if you need more, you can double the portions. Although, you will need to clean your skillet after preparing the first serving. The debris left behind from making the first batch of sliders will burn and cause sticking which will ruin your second batch.

I really like jalapeno sliders with queso and beef bacon, the flavors are very distinct, but allow each one to come through on the palate. I find it impossible to eat them without mezcal or tequila in the other hand though. Perhaps that says more about me than the recipe…

Jalapeno Sliders with Queso and Beef Bacon

Ingredients

Tomato Relish

  • 8 plum tomatoes
  • 1/4 cup red onions minced
  • 4 tbsp tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1/2 tsp kosher salt

Sliders

  • 2 lb 80% lean ground beef
  • 3 oz unsalted butter
  • 16 slices uncured beef bacon
  • 16 dinner rolls
  • 8-12 oz queso blanco cut into approx. 1/2 oz slices
  • 8 jalapenos halved, membranes and seeds removed

Equipment & Utensils

  • Grater
  • Medium sieve
  • Large skillet or grill pan
  • Board for cooked meats
  • Large serving plate or board
  • Aluminum foil
  • 16 Skewers or toothpicks

Instructions

Tomato Relish

  • Grate tomatoes into a bowl, then place contents into a sieve.
  • Press down on grated tomatoes in sieve to remove liquid.
  • Return the tomatoes to bowl, then add onions, ketchup, Worcestershire sauce and salt then combine and set aside.

    Sliders

    • Divide ground beef into 2 oz portions and then mould into patties. Be careful not to overwork the meat.
    • Heat 2 oz of butter in skillet and once it begins to bubble add 8 of the patties.
    • Cook for 2 mins on both sides, and then place on a board to rest.
    • Add the balance of the butter to the skillet, and again, once it begins to bubble add the other 8 patties.
    • Cook for 2 mins on both sides, and then place on board to rest.
    • Cook bacon in skillet until slightly crispy and then place on paper towels to drain.
    • Drain fat from skillet and set aside.
    • Cut dinner rolls in half and heat in preheated oven at 400.
    • Once dinner rolls are warm, place them on serving plate.
    • Spoon approx. 1 tbsp of tomato relish onto the base of each dinner roll.
    • Place a slice of bacon on top of relish, and then patties on top of the bacon, then a slice of queso on top of the patties.
    • Tent with aluminum foil while you cook jalapenos.
    • Heat skillet on high then add jalapeno halves.
    • Cook jalapenos on both sides until slightly charred, then place one on top of queso.
    • Carefully press down on slider with top of dinner roll and secure with a skewer or toothpick.
    • Serve immediately
