Nori breakfast rolls with tomato dip is a breakfast treat, perfect for two. An ideal “breakfast in bed” dish.
Imagine how impressed your partner would be if you created hand rolled breakfast bites filled with eggs, spinach, tomatoes and avocado. Mmmmm, this is so delicious, and the deliciousness is amped up when you dip these lovely rolls into the accompanying tomato dip.
What I really like about this dish is how simple the recipe is. It’s just a few fresh ingredients most people have in their fridge, wrapped in seaweed sheets. How could it be simpler?
Folks, I think this could be a go to dish for me going forward.
If you’re having a brunch party, nori breakfast rolls with tomato dip would be a great addition to the menu. You could serve them on toothpicks so that they are easy to dip, or arrange two breakfast rolls on a small plate and drizzle with the dip. I’m certain your guests would love them no matter how you serve them.
My motivation for making nori breakfast rolls is due to what felt like a barrage of photos of nori rolls on my Instagram feed. Perhaps I’m imagining it, and instead, it was my blog genie compelling me to explore food wrapped in nori. But no matter the motivation, I’m glad I bought some toasted seaweed sheets and explored a few recipes.
I assumed working with nori sheets would be very difficult. I had memories of Samantha, in Sex in the City, rolling sushi until she got it right to surprise Smith Jarrod, and after all the effort she put into it, Smith Jarrod was nowhere to be seen.

Needless to say, I had a sense of trepidation as I embarked on this nori journey. But as soon as I filled my first nori sheet, my worries were thwarted . I was able to push everything together and make the rolls quite easily. Nori has some give to it, so never fear, it doesn’t tear or break easily.
To seal them, I simply dapped the end of the nori sheet with water, then completed the roll. Bing, bang, bong, my roll was complete.
I did have to practice filling consistency to make sure every piece resulted in a perfect roll, but that didn’t take long. If you are a novice in rolling food-filled seaweed sheets, I’d suggest one or two practice rolls before attempting to create nori breakfast rolls with tomato dip. Just fill a nori sheet with something you have in your fridge. You will easily get a feel for how nori sheets behave when rolling, and you should be golden.

Nori Breakfast Rolls with Tomato Dip
Ingredients
Tomato Dip
- 1/4 cup grape tomatoes quartered
- 1 tbsp chives
- 1 tbsp olive oil
- 1/4 tsp apple cider vinegar
- 1 tbsp mayonnaise
- pinch salt
Nori Rolls
- Nori - toasted seaweed sheets
- 2 eggs
- 2 tbsp milk
- 1 tbsp chives
- 2 x 1/2 tbsp butter
- 1 packed cup baby spinach
- 1 cup grape tomatoes quartered
- 1 avocado peeled and sliced
- 1 tbsp of water for sealing nori
Equipment & Utensils
- Blender
- Large chopping board
- Small skillet with a base no larger than seaweed sheets
- Very sharp chef's knife
Instructions
Tomato Dip
- Place tomatoes, chives, oil and vinegar in blender and blend until smooth.
- Add mayo and salt and mix together, then set set aside in fridge.
Nori Rolls
- Place two seaweed sheets on a board ready to fill with ingredients.
- Whisk eggs and milk together, then add chives and mix.
- Heat skillet on high then add 1/2 tbsp of butter.
- Lower heat to medium then add half of egg and milk mixture to skillet.
- Cook into a thin omelette. Do not allow to brown.
- Flip to ensure both sides are cooked.
- Transfer omelette to a plate and allow to cool a little.
- Repeat instructions 6-9.
- Place an omelette on top of each seaweed sheet.
- Allow approx. 1 inch of space to one edge to allow sealing/closure
- Divide spinach into two parts, and place one part on top of each omelette.
- Divide tomatoes into two parts, and place one part on top of each omelette next to spinach.
- Divide avocado into two parts, and place one part on top of each omelette next to tomatoes.
- Dap edge of seaweed sheet with water until its tacky then lift up the other edge of the seaweed sheet and begin to roll.
- Roll up everything as tightly as you can, then push wetted edge to seal.
- Allow to sit for 2 minutes then cut into 1 inch rolls.
- Pour tomato dip into a small bowl and arrange nori rolls on a serving plate and serve.
