So I’ve been circling the aisle at Whole Foods where the raw manuka honey lives. The honey elixir that heals many ailments – infections , cholesterol, diabetes and wounds. But wow what a price tag, this stuff is so expensive. When I first heard of raw manuka honey my interests were piqued, the healing properties were really appealing to me. But after seeking it out in the store I was floored by how much it cost, it was way too rich for my blood. The average cost for a jar of this stuff was $30.00, who would pay $30.00 for a jar of honey? No really? Well apparently that would be yours truly. 🙂

Now let me explain. I made up my mind that raw manuka honey wouldn’t be a feature in my kitchen, its price tag outweighed the possible benefits for me, but I couldn’t stem my curiosity. With a price tag like that, this honey must have some great qualities – right? I kept circling the jars at Whole Foods week after week, until the day I noticed a wonderfully packaged honey apple juice and one of its main ingredients was raw manuka honey. It looked so good and sounded unbelievably tasty so I grabbed one and dropped it into my cart.  I cracked the seal in the taxi ride home and it was gone by the end of my 7 min journey. It was real nice.  So the juice became my best friend, my Saturday morning treat and drink of choice on my recent flights to the Caribbean and Mexico. Until last Saturday when I realized I had confused the cost of this wonderful juice – $7! Who pays $7 for a single serving of juice? That again would be me. 🙂

To right my financial indiscretions and to appease my new addiction I made haste and clambered to the aisle I’d been circling for so many weeks and grabbed the most cost-effective jar of raw manuka honey that I could find so that I could recreate the juice that made me feel so right.

That was the birth of my raw manuka honey apple juice. A wonderful, tasty drink that puts a smile on my face and hopefully does my body some good.

Raw Manuka Honey Apple Juice

A refreshing apple juice with healing properties

Ingredients

  • 6 pink lady or cripps pink apples
  • 2 inches of fresh ginger
  • Juice of 2 lemons
  • 2 tbsps raw manuka honey

Instructions

  • Cut and core apples and peel ginger.
  • Juice apples and ginger and pour into a blender.
  • Add lemon juice and honey and blend on low until honey is absorbed.
  • Serve cold.
