Let’s celebrate with a martini, a lump crab and guacamole martini. My family and friends truly love guacamole, the only way you could improve on it for them would be to top it with jumbo lump crab, so thats what I did!
I adapted Emeril’s kicked up guacamole recipe with a family friend in mind – Richmal. A lovely lady with discerning tastes and great character, and a pleasure to spend time with. Richmal loved it, she doesn’t even like tomatoes, but didn’t let on until she had devoured her serving and a little more on the side.
I’m grateful that my friends and family are such willing participants in my blog life. The only issue I have is that once I mention that I plan on creating a specific dish, they expect to get their chops round it no matter where or when. I tested this recipe late one Sunday night and Richmal, Vanessa, Jasmine and Wayne were there, straight from a fun weekend in DC, forks in hand ready to taste test and give feedback. What would I do without them?
If you have an occasion you intend to celebrate with a meal, consider this lump crab and guacamole martini as an appetizer. A perfect celebration dish, but simple to create. This lump crab and guacamole martini can be whipped up in 30 minutes and served, to no doubt, rapturous applause.
Lump Crap and Guacamole Martini
Ingredients
Guacamole
- 3 haas avocados
- 1/2 cup red onion diced very small
- 1/2 cup tomatoes deseeded and diced very small
- 1 tbsp jalapeño
- 1 tbsp lime juice
- Salt to taste
Lump Crab
- 8 oz jumbo lump crab meat
- 1/2 cup red onion diced very small
- 1/2 cup tomatoes deseeded and diced very small
- 1/4 cup fresh cilantro finely chopped
- 1 tbsp lime juice
- Salt and pepper to taste
- 12 tortilla chips
Equipment & Utensils
- 4 martini glasses
Instructions
Guacamole
- Peel and core avocados and then roughly chop.
- Place avocados into a bowl and then add red onion, tomatoes, jalapeño, lime juice and salt to taste.
- Mix ingredients and gently mash the larger pieces of avocado until ingredients are completely incorporated then set aside.
Lump Crab
- Place red onion, tomatoes and cilantro in a bowl and mix.
- Add jumbo lump crab meat and lime, and mix once again.
- Add salt and pepper to taste and set aside.
To Serve
- Place two tortilla chips in the base of each martini glass, then add two spoonfuls of guacamole on top.
- Top guacamole with 3 spoonfuls of lump crab and then stick another tortilla chip into the top of lump crab.
