I had a great idea to incorporate wheatgrass shots into my diet. The plan was to start the day with a couple of wheatgrass shots and reap the benefits. Boost of energy, agile mind, and improved digestion to name a few. I bought 6 oz of wheatgrass, juiced it, removed the frothy top layer and threw the first shot down my throat. Now, I was aware that wheatgrass has a bitter after taste, but my oh my, my taste buds were not ready for that kind of bitter – I just couldn’t willingly chuck another shot down my throat. Thus pineapple wheatgrass shots were born, and now my preferred method of imbibing wheatgrass.

Coconut Oatmeal
I love oatmeal but sadly it doesn’t love me so much. A bowl of oatmeal gives me major heartburn, it’s so frustrating. It doesn’t matter what base I use to make my oatmeal – water, milk, almond milk, after every bowl I get that familiar burning in my chest, it sucks. To find relief I have to chug down antacids, otherwise hours pass before I get relief. Hence today’s recipe, coconut oatmeal. It is 1 part oats to 1 part dried coconut chips, and a saving grace to my digestive system.

It takes very little effort to make, and I’m certain it will be a regular feature when you have the luxury of time.
No need to panic about the pastry, I didn’t make it from scratch. I just bought a packet of pre-made frozen puff pastry. All I had to do was defrost as directed. So easy.
Plantain Ricotta Toast
This is delish! Plantain ricotta toast makes for a great breakfast or brunch. Earlier this week I wanted to raise a glass to Martin Luther King on MLK Day, but as I am on the wagon for the month of January, I couldn’t raise a glass with something bubbly, so I made plantain ricotta toast for brunch instead.

Bacon Eggs and Beans in a Bagel Basket
I’m going back to my roots. My British roots that is, so I’ve prepared a typically British breakfast, but with a twist – bacon eggs and beans in a bagel basket. The twist being the bagel basket of course.
