Lettuce Wedge Salad

Memorial Day Weekend is a week away and I’m hoping New York will see some consistent warm and dry weather. I don’t have anything planned for the weekend, I’m, just going to take it easy, but if you plan on getting some folks together, here’s an easy peasy salad recipe – Lettuce Wedge Salad. This recipe is slight a departure from the traditional. I’m a crunch fanatic, so if you are too you’ll love this salad.

Cucumber Salmon Salad

Is it spring yet! I hope it is where you are. New York is still quite cold, although beautifully sunny, which inspired me to share my recipe for Cucumber Salmon Salad with you.

Cucumber Salmon Salad is delicious. It’s a great brunch dish and ideal for those who do not eat eggs or meat. Serve with a pitcher of sangria and a smile.

Garlic Kale and Farro Salad

I’m trying to find meals that will fend off my yearning for rib-sticking food, and I’m thinking kale might be of great help. I don’t think there is anyone who would argue with me when I say eating lots of kale is a good thing. Kale is filling, and when mixed with tasty food partners, it’s a great meal. Just like today’s recipe, garlic kale and farro salad. A delicious mixture of kale, farro, parmesan and pine nuts with a garlic dressing.
