These canapés are super easy and quick to make, and oh so tasty. Just get some frozen fillo pastry shells and pop them in the oven as directed, then mix the rest of the ingredients together, and fill the shells. Easy right?
Sometimes, I just need a dinner for one. Something I can put together in minutes, but a meal that is still wonderfully tasty and nutritious. When those times come about, I make something just like this – spicy chicken with tomatoes and blueberries.
This dish is so easy to create. You just coat the chicken with sambal oelek, and then sprinkle with salt. Place the tomatoes and blueberries on a baking tray, then the chicken on top. Finally, bake in the oven until the chicken is crispy. That’s it!

I am exhausted. I have been so busy, I’ve barely had time to relax and enjoy a good meal.
