Lemon Garlic Baked Snapper is a great fish dish. It’s a grown up meal, perfect for a Sunday Supper.
For this recipe the snapper is wrapped in foil before being placed in the oven. The steam caught up in the foil helps to cook the fish to a perfect moist yet firm consistency.

Today’s recipe is Kielbasa and Peppers, it’s a very tasty layering of flavors you will want over and over once you try it.
I used two types of peppers, large red peppers and shishito peppers. The juxtaposition of the sweet red peppers and the smokey and potentially spicy shishito peppers provides a tasty contrast. The kielbasa should be smoked to provide depth of flavor and the canned tomatoes provides a sweet and zesty quality. The thyme, onions, garlic and veggie stock brings everything together to make for a really wonderful dish.
Gochujang Glazed Alaskan Black Cod is an easy peasy dish. It’s super delicious, and after marinating, can be made in minutes.
Serve on a bed of veggies, or grains to achieve a relatively low-calorie meal.
Grilled Apricot and Burrata Salad is very tasty indeed. It’s a little different to what I would call a “regular” salad, as the most prominent ingredient is fruit.
Grilled Apricot and Burrata salad can be made with or without prosciutto. I prefer it with, but if meat is not your thing, you can leave it out. Prosciutto adds a nice salty element, but it doesn’t make or break this salad.
